in the spirit of holiday baking....

Ok I am alive... just trying to keep baby x on the inside of my body. I am on a ton of hormones, and it is making me sleep ALOT. But anyway... thought I would share some of our holiday bread recipes with you guys.

Carrot Pineapple bread

Beat
2 eggs
2 c. sugar
1 c. oil
Add
3 c.flour
1 tsp salt
1 tsp cinnamon
1.5 tsp soda
2 tsp vanilla
Add
2 c. grated carrots
8 oz can crushed pineapple (undrained)
1 c. chopped nuts

Bake 350 for 40 minutes 2 large loaves

I know carrot and pineapple sounds weird, but it is sooooooo yummy. trust me!


Cranberry Bread

2 c. flour
1/2 tsp salt
1.5 tsp baking powder
1/2 tsp soda
1 c. sugar
1 beaten egg
2 Tbs melted butter
1/2 c orange juice
grated rind of one orange
2 Tbs hot water
1/2 c chopped nuts
1 c. cranberries cut in half
Sift dry...add egg, butter, oj and rind...hot water last. Fold in berries and nuts
bake at 325 for 1 hour and ten minutes...step up the heat a little in the last ten minutes. Remove from pan and wrap at once in waxed paper. Refrigerate at least 3 hours.
Remove waxed paper and rewrap .

This is my fave that we make. it is wonderful for breakfast, with a little cream cheese on it. my mouth is watering now.

Banana Nut bread
1/2 c veg. oil
1 c. sugar
2 eggs beaten
3 mashed banana
2 c. flour
1 tsp soda
1/2 tsp baking powder
1.2 tsp salt
3 Tbs milk
1/2 tsp. vanilla 1/2 c. chopped nuts
Beat oil and sugar. Add eggs and bananas beating after each addition. Sift dry and add to banana mis along with milk and vanilla. Beat well. Stir in nuts Bake at 325 5 small loaves for 35 minutes.

Warm banana bread with whipped butter on it... my mouth is watering!
